Storage of ready-to-cook fresh cut vegetables (baby corn - cauliflower - carrot) in modified atmosphere packaging (map)
The purpose of this research was to determine the respiration rate of ready-to-cook fresh cut baby corn-cauliflower-carrot. More specifically, the objectives were to determine the O2 and CO2 composition of the atmosphere inside the packaging for the mix fresh cut baby corn-cauliflower-carrot, and to select the suitable type of packaging film for the MAP of mix fresh cut baby corn-cauliflower-carrot. The slowest respiration rate of mix fresh cut baby corn-cauliflower-carrot was obtained at 5oC indicated by 5.9 ml/kg.hr at O2 consumption and 3.4 ml/kg.hr CO2 production, with the RQ value of 0.58. From five treatments of different atmospheric composition, the best one to maintain best quality of mix fresh cut baby corn-cauliflower-carrot was 14 ┬▒ 0.5%O2 and 4 ┬▒ 0.5%CO2 at 5oC. Stretch film was validated as food packaging material to store mix fresh cut baby corn-cauliflower-carrot in Modified Atmosphere Packaging (MAP). The stretch film would provide 4.5 days of shelf life for the mix fresh cut baby corn-cauliflower-carrot at 5oC.
