Analysis of ethnic food as part of a region's culture and its authenticity importance, case study: Padang restaurant in Jakarta
This thesis is about authenticity importance analysis of ethnic food which case study is existence of Padang restaurant in Jakarta. Padang food was chosen due to its popularity and uniqueness among other food. The purpose of this research is to have the reader recognize further, attracted more with, and appreciate the true identity of ethnic food. Also, hopefully this thesis can fulfill the curiosity of how an ideal ethnic food is. The methodology used to do this research is descriptive method. The data collection method will be using primary data and also secondary data Some facts were collected through this research: how Padang restaurants were spread because of wander tradition, how they are very success because of the implemented system, how differ Padang restaurant in West Sumatra and in Jakarta, etc. In the end, the conclusion of this thesis is that ethnic restaurant should do more than just providing food, there are more values they can offer to customers; and authenticity is the way to do so.
