Honje (etlingera elatior) as antimicrobial for fresh fish
Honje (Etlingera elatior) is believed has an active compounds that could be used asrnantimicrobial agent. This plant was used in this research and active compounds werernobtained by using ethanol extract. It was applied to prolong the shelf life of the freshrnfish. The two factors were analyzed in this research which is different concentrationrnof honje extract and time exposure of the fish. The results showed that the number ofrnbacteria present on fish differ significantly when the time exposure was 5 hours. ThernTVB analysis was also conducted in this research to measure the effectiveness ofrnhonje extract as fish preservation. Sensory analysis was conducted to know whetherrnhonje extract will give undesirable taste and appearance to the fish or not. The resultrnshowed that people could not differentiate between fresh fish and fish with treatment.rnIt was concluded that the honje extract could preserve the fish without impact to therntaste or appearance of the fish.
