Application of enzymatically processed chitooligosaccharides for anti microbial agent of food product

This research was part of research on the exploration of natural antimicrobial materialrnfrom chitin derivatives. The aim of the research was to identify the bioactivity ofrnchitooligosaccharides of T5A1 bacteria isolated from shrimp waste. The antimicrobialrnactivity was carried out by assaying the chitooligosaccharides to various species ofrnbacteria and 1 yeast and concentrations. The antimicrobial effects ofrnchitooligosaccharides compared with chitosan and chloramphenicol were evaluated.rnThe result indicated that chitooligosaccharides was ineffective to inhibit the growth ofrnListeria monocytogenes and Staphylococcus aeureus. However, it showed weakrninhibition to E.coli and Salmonella typhimurium. The inhibition diameter of E.colirnwas 6.5 mm at 3000 ppm while the inhibition diameter of Salmonella typhimuriumrnwas 5 mm at 1750 ppm. Chitooligosaccharides showed significantly strongerrninhibition to gram negative bacteria than gram positive bacteria. Antimicrobialrnactivity of chitosan didn?t show siginificant different if we compared it with thernantimicrobial activity of chitooligosaccharides.
