The characteristics of katuk leaf (sauropus androgynus (l.) Merr) powder produced by using drum dryer

The general objective of this research was to characterize the katuk leaf powder produced by drum drying in order to find the potential of katuk leaf powder as antioxidant source and breast milk stimulant. The katuk slurry preparation was done without blanching process and with the ratio katuk leaf over water 1:1.5. Then, the slurry was drum dried into katuk leaf powder at 5 rpm by variation of drum drying temperatures (120, 130 and 140oC) and concentrations of maltodextrin (5, 10, 15, and 20%). The dried katuk leaf powder produced was analyzed for its antioxidant activity by DPPH Assay, yield and moisture content. The results found that katuk leaf powder produced at temperature 140oC and with addition of 5% maltodextrin by drum drying contained the highest antioxidant activity (60.87 ┬▒ 2.573 ┬╡g DPPH/mg katuk leaf powder) among other treatments. This katuk leaf powder could act as antioxidant source and was assumed to act as breast milk stimulant with 2 fatty acids detected by GC-MS (?-linolenic acid and stearic acid). Other characteristics such as nutritional content by proximate analysis, bulk density, color, reconstitution time, and insoluble solid were also determined.
