Dimerization of 2-Allyphenol Using Peroxidase Enzyme as a Catalyst

At high concentrations free radicals can be hazardous and damage major components of cells. Some environmental toxins may contain high levels of free radicals or stimulate the cells body to produce more free radicals. an antioxidant can inhibit the radical process. Consequently it is important to find highly active antioxidants that can prevent the oxidation process more efficiently. Phenolic compounds are known have antioxidant properties. the 2-allylphenol one type of phenolic compounds may have potential as antioxidant although there are no reports about using 2-allylphenol as a antioxidant. Some researches show that if mono-phenol compound join and became the dimer phenol compound, the antioxidant activity may increase. one of the methods for dimerization is by using a peroxidase enzyme as a catalyst. Peroxidase is a group of enzymes that catalyse the oxidation of a compound by the decomposition of hydrogen peroxide¬¨?ù(H2O2) and react with other molecule thus convert the molecule into radical. the radical molecule then may conduct oxidative coupling with another radical and form a dimer to complete the termination stage. the reaction product from this research is suspected to contain a 2-allylphenol dimer. the antioxidant activity of reaction product is higher than 2-allylphenol.
