Production and analysis of indonesian green tea instant powder
This thesis is not published due to patent processrnrnProduction process and quality of green tea instant powder produced from Indonesian tea plantations were assayed in this study. The green tea instant powder was produced using spray dry method. Determination of polyphenols compounds, total catechin content and antioxidant analysis were parameters measured in this study. The radical scavenging behavior of the tea antioxidant compounds on 2,2-diphenyl-1- picrylhydrazyl radical (DPPH) was studied spectrophotometrically. Moreover, total polyphenols content was determined according to the Folin-ciocalteus method, and total catechins compound were studied by using Ethyl Acetate extraction method. The results showed that the extract obtained from the Camellia sinensis var. assamica which is the type of tea plant that is widely grown in Indonesia, was possessed higher antioxidant activitites, total polyphenols and catechins compare to the Camellia sinensis var sinensis that is mostly grown in Japan and China. The utilization of membrane filtration during green tea instant powder production process was also shown to increase total poplyphenol compounds and antioxidant activities of the final product. Roasting, on the other hand, was not seen to significantly affect the quality of the extract.
