The production of aloe vera powder using spray drying
This project is attempting to produce aloe vera powder using spray drying and comparing it to the aloe vera powder produced with freeze dryer, with certain pre-concentration. The processing methods include extraction of aloe vera gel, pre-concentration which was accomplished by a refrigerated centrifuge, and dehydration using spray and freeze drying. The main purpose is to compare the effect of different dryers and various pre-concentration ratios. The quality of aloe vera powder is signified by some parameters like antimicrobial activity, antioxidant activity, microbiology, moisture content, pH, and organoleptic. The analysis shows that antioxidant activity of aloe vera powder become lower at higher pre-concentration. The antimicrobial activity within each concentration shows insignificantly different result. However, the production of aloe vera powder using spray and freeze drying can be classified as high quality product.
