The production of temulawak (curcuma xanthorrizha roxb) extract through the use of spray dry using γö£╞æ-cyclodextrin as encapsulant
Temulawak (Curcuma Xanthorrhiza Roxb) is known as one of the Indonesian indigenous herbs that has been consumed traditionally. Temulawak extract in instant powder form was produced in this research using spray dry as the apparatus. Some of the temulawak key constituents are non polar, such as curcumin, which limit their physiological activities due to their insoluble nature in aqueous solution. Hence, to improve this, encapsulation of temulawak extract using ?-cyclodextrin was studied at 1:54 and 1:81 mol ratios. The encapsulation time was 4 hours at room temperature. Encapsulation using maltodextrin (1:137 mol ratio) was also tested for comparison. The antioxidant activities of the products were tested using the DPPH (free radical) method. The results of antioxidant activity tests showed that encapsulation using ?- cyclodextrin 1:81 was better than 1:54, and it was also better than using maltodextrin as encapsulanting agent.
