The study of stability of four o'clock flower (mirabilis jalapa linn) extract in different ph & temperature
The general objective of this research is to find the best pH and temperature for the four o?clock flower extract to maintain its stability with minimum degradation of phenolic compound and antioxidant activity by monitoring its stability in different pH and temperature. The stability of the flower extract was monitored for 28 days by measuring total phenolic content and antioxidant activity of the extract. Temperature of 4┬║C was proven to maintain phenolic compound and antioxidant activity in stable condition in all pH concentration of 1, 3, 5, and 7, while with room temperature it was only proven to maintain phenolic compound and antioxidant activity at pH 1 and 3. Statistical analysis by Design Expert 8 (trial version) and regression test was used to determined which pH and temperature was the most acceptable to maintain stablernphenolic content and antioxidant activity. The most stable pH and temperature for the flower extract was pH 1 and 3 in temperature of 4┬║C which able to maintain 3.6445 mg/L GAE of phenolic content and 16% of antioxidant activity.
