Purification of high grade papain from latex of carica papaya by using column chromatography technique
Papain is an enzyme that could break the peptide bonds in order to give easily digest of food composition and widely used in industrial scale as a commercial product (papain powder). The purpose of this research was to improve the enzyme activity of purified papain by using size exclusion of chromatography as enzyme purification methods. The results showed that papain purification by involving size exclusion chromatography substantially increase the purified papain obtain. Otherwise, the final product was increasing the value of papain itself after processed from latex papaya.
