Development of omega-3 emulsion syrup from candlenut oil extract
The purpose of this research was to develop the omega-3 emulsion syrup from candlenut oil extract. The extraction used cold expeller machine and after omega-3 test was found that the oil contain 26853.96mg/100 g. By stability test, emulsifier type mixed of tween80 and span80 was chosen as the ideal viscosity emulsion than tween60 and span60, Lecitin and tween20 and span20. The emulsion formula has been made using various concentrations of candlenut oil in 1.3%, 2.6%, 5.2%, 7.8%, and 10.4%. Stability test containing observation of organoleptic, diameter changes, pH changes, and viscosity showed that all formulas relative stable for ┬▒7 days storage period. Formula that containing 2.6% of candlenut oil is the most preferable based on hedonic test. The omega-3 value which gained from the preferable formula is 58.63 mg/100mg. The saponin test was measured to the candlenut oil and emulsion sample from the preferable formula and the result was 683.375 mg/100 gr candlenut oil and 787.5 mg /100 gr emulsion.
