Formulation of baby rusks enriched with omega 3 from candlenut oil extract
Candlenut oil is oil, which has rich content of unsaturated fatty acids. There is limited number of research in application of candlenut oil as source o unsaturated fatty acids. Thus the aim of this research is to enrich baby rusk rich in omega-3 that will benefit for the brain development of baby. The candlenut oil was produced using cold expeller pressing method to maintain the nutritional value of the oil. The temperature of baking were 140┬░C, 150┬░C and 160┬░C, while concentration of candlenut oil was in ratio with butter. The ratios between candlenut oil to butter were 1:0, 4:1, and 3:2. Sensory test was performed in order to decide the most likelihood sample to be analyzed further. The best baby rusk composition is formulation 4:1 with baking temperature at 160┬░C. The amount of omega-3, omega-6 and omega-9 afte the addition of 8% candlenut oil to baby rusk per 100 g were 18.15, 1542.06 and 562.634 mg respectively.
