Managing kitchen in establishing an effective and efficient organization (a case study in the Ritz-Carlton Hotel Jakarta, Pacific Place)
Establishing an effective and efficient kitchen is a vision for every Chef. It requires a good management and organization to establish that kitchen. The main purpose of the research is to find out the proper procedure in managing kitchen in effective and efficient way and compare that theory with the real situation in industry. This research is conducted to study the operation of large and complex kitchen of The Ritz Carlton Hotel Jakarta, Pacific Place at the same time improving the flow of operation in order to determine the way to maximize its operation. An inductive, evaluative and qualitative research will be used on this research. This research will gather the data through observation of the location, interview with the chef and questionnaires among the kitchen staff and then compared with the literature review.
