Anthocyanin and fabric utilization as a sensor for fish deterioration
The consumption of fish had increased to 20 kg a year because of its rich abundant content in nutrients. According to SNI, fish freshness was determined based on TVB-N value, which was the limit of TVB-N acceptability of fish freshness at 30mgN/100g. On the other hand, Clitoria ternatea (CT) was found on having three main colors at three different pH, which was red at pH 1-2, purple at pH 4, and blue at pH 7. When the pH was made by diluting HCl into pH 2 to 4, pH 2.8 was the best pH for CT to be utilized as a sensor on detecting fish deterioration. Cotton fabric with 0.7cm x 0.7cm dimension was chosen for appropriate media to deposit anthocyanin within using dip coating machine. The 5s dipping duration with one time dipping was applied to fish product which is stored in room temperature and freezer. However, freezer storage could not be used because the sensor was contaminated with water during the observation. Whereas, in room temperature storage, the sensor was not sensitive enough because when TVB-N value was 30.675 it exceeded the acceptable limit, the sensor did not reached its saturation limit (90%).
